- All of my family members who “hate curry” love this. It’s not curry-ish. I promise.
- Make sure you save a spoon to eat the leftover sauce after everyone else has left the table. It’s that good.
Imagine this scenario: it’s the weekend. Or Monday. You’re family is starving to death and you want something to throw together quickly that doesn’t make you spend an extra 2 hours cleaning up afterward. You don’t have a whole heck of a lot of supplies in your pantry….but you DO have some chicken in your fridge…..
Well then….here’s your new favorite “I-forgot-to-go-grocery-shopping-but-apparently-we-still-need-to-eat” recipe.
6-8 chicken breasts, trimmed
2 sticks butter (yes, real butter again…) melted
1 c honey
1/2 c dijon mustard
2 teaspoons curry
1 teaspoon salt
Preheat oven to 375; put your chicken in a 9X13; mix the other ingredients; pour over chicken; turn chicken to coat evenly; bake, covered, for 45 min; uncover and bake 15 min more.
Throw on some rice during the last 15 minutes of baking and serve your chicken over that with a GENEROUS supply of sauce. So. Good. You will be the most colorful hero on the block.
